Moso bamboo. Also known as Wasedake, Kounanchiku (Gangnam bamboo). Meng Zong, a Wu man from the Three Kingdoms of China, entered the bamboo grove in winter for his mother and begged for it.
The distinction between Madake and Mosouchiku is the difference in the number of bulges (rings) at the nodes. Mosouchiku has one ring and two madake from the root to the node where the branch comes out.
Bamboo shoots are early in the bamboo, from March to May, so most of the bamboo shoots on the market are moso bamboo shoots.
